Ingredients:
- 1 medium/large garlic clove
- 1/3 cup tahini
- 5 tablespoons fresh lemon juice, or to taste
- 2 tablespoons chickpea brine from the can (or water)
- 1 (14-ounce) can chickpeas
- 2 to 3 teaspoons olive oil, to taste
- 3/4 teaspoon fine sea salt, or to taste
- Freshly ground black pepper, to taste
- Olive oil, for drizzling
- Paprika, for garnish
- Lemon zest and black pepper, for garnish (optional)
Directions:
- Open the can of chickpeas and set aside 2 tablespoons of the brine (liquid). Drain and rinse the chickpeas.
- Add the garlic clove into the food processor and process until minced.
- Add the rest of the ingredients, to taste, and process until super smooth. Stop to scrape down the bowl as needed.
- Spoon into a bowl and add your desired garnishes.
