This silky smooth hummus is enhanced with a generous amount of lemon and freshly ground black pepper.

Ingredients:

  • 1 medium/large garlic clove
  • 1/3 cup tahini
  • 5 tablespoons fresh lemon juice, or to taste
  • 2 tablespoons chickpea brine from the can (or water)
  • 1 (14-ounce) can chickpeas
  • 2 to 3 teaspoons olive oil, to taste
  • 3/4 teaspoon fine sea salt, or to taste
  • Freshly ground black pepper, to taste
  • Olive oil, for drizzling
  • Paprika, for garnish
  • Lemon zest and black pepper, for garnish (optional)

Directions:

  1. Open the can of chickpeas and set aside 2 tablespoons of the brine (liquid). Drain and rinse the chickpeas.
  2. Add the garlic clove into the food processor and process until minced.
  3. Add the rest of the ingredients, to taste, and process until super smooth. Stop to scrape down the bowl as needed.
  4. Spoon into a bowl and add your desired garnishes.
